The Quiet Genius of Pipit
Tucked into the quiet, laid-back coastal town of Pottsville - just south of the Tweed River - lies Pipit. At its helm is chef Ben Devlin and designer Yen Trinh - husband and wife duo, who’ve crafted something far beyond a dining room.
Pipit is part kitchen, part gallery, part slow and intentional eating experience that challenges the idea that restaurants need to be flashy to be great. Without pretentiousness, every ingredient at Pipit is significant, from its region, its growers and how it’s combined with others to create something incredible.


"Sometimes people come for bold flavours or clever techniques," Ben says. "But what they leave with is something else. A deeper understanding of food and produce. That’s what we hope to create."
For Pipit, the fields and coastlines of the Tweed are an evergreen canvas that inspires new dishes and the chance to explore - from smoked snapper cream to duck fat caramel.
Rooted in Place
Walk through Pipit’s doors and you’ll sense the hand of Yen Trinh immediately. An expert designer, she’s created more than just a dining room. It’s a space that invites participation - open, human, and curious. This space wants you to engage, to see the chefs at work and ask questions. Even the tables hold stories, diners receiving an illustrative map of where Pipit’s ingredients come from.
“A restaurant is a platform,” Yen says. “For sustainability. For storytelling. For connection.”

From the ground up, Pipit has been built to connect people to place. With Ben’s decades’ worth of restaurant experience in world-renowned kitchens, his return to the Northern Rivers emphasised proximity to local growers, richly seasonal produce, alongside a sense of ownership and playfulness.
His ingredients come from neighbours’ backyards, unlisted fisheries, and farms that don’t do wholesale. A sourcing approach that feels alive and genuine - figs traded over fences, kelp harvested in the morning and transformed by lunch. It’s never about trends, but about creating relationships and creativity.
…“Our sourcing focuses on small-scale and often non-commercial suppliers,” Ben explains. “It’s about prioritising freshness and uniqueness.”

Honouring Ingredients
The menu at Pipit doesn’t follow a schedule, but the weather. A late rain might bring out the seaweed. A burst of warmth might shift the fruit.
Take humble seaweed, often overlooked on the beach or in sushi. At Pipit, it becomes jellies, oil, shoyu, miso, candis, powders, kelp-wrapped aged fish and even kelp-miso washed cheeses.
“You don’t always get a second chance with certain ingredients,” Ben says. “So there’s a real spontaneity to it.”
And nothing is wasted. Fish fat becomes caramel. Duck bones become biscuits. A single mandarin might inspire the entire week’s menu.

The Art of Gyotaku
Ben’s creativity doesn’t stop at the kitchen door. When COVID brought the world to a pause, he turned to Gyotaku - an ancient Japanese art form that uses fish as printing tools. What started as a quiet way to pass time and as another way to utilise an ingredient, soon became part of Pipit’s creative identity.
“Printing a fish changes how you see it,” Ben says. “You start to notice its texture, its shape, the way it moves. That changes how you cook it too.”
The prints - raw, elegant, deeply tactile - now line the walls of Pipit and appear in the margins of the dining experience. They’ve become part of the language of the restaurant: a way of seeing, not just showing. This then sparked a bigger idea: what if others could experience this?

From Ocean, To Paper & Plate
The From Ocean to Paper and Plate experience began with a simple enquiry - a trusted agent reaching out on behalf of a family looking to catch and cook their own fish at an established restaurant.
Knowing Ben and Yen’s ethos, their deep respect for process, local sourcing, and creativity, we collaborated with Pipit to design something bespoke. A quiet, hands-on journey that paired Ben’s passion for Gyotaku fish printing with his intimate cooking style.

The experience was a revelation. Guests began the day on a private fishing charter, catching their own fish alongside Ben. Back at Pipit, they transformed their catch into art using the traditional Japanese Gyotaku technique - a physical imprint of the moment, later framed and shipped home as a lasting memory.
Then, from the kitchen bench, they watched as Ben prepared a multi-course meal using the very same fish - incorporating everything from skin to bone. Some parts are fermented into miso or sauces; others are passed on to a local ceramicist who uses the bones to create textured, custom-made plates for the restaurant.
It’s not a cooking class. It’s not a kitchen tour. It’s a full-circle experience - a sensory journey through ocean, art, and nourishment.
“It’s not your typical restaurant experience,” says Yen. “It’s about seeing, feeling, and tasting something real. And taking that memory with you.”

Ben recalls that first family fondly: “They’d never seen a kingfish like that. After printing it, they took the artwork home — a trophy, a memory of the time they spent together. It was something special.”

The experience opens with personal storytelling from acclaimed Quandamooka artist Delvene Cockatoo-Collins or her son, Preston, offering guests a meaningful introduction to Brisbane and her roots on Minjerribah (North Stradbroke Island). Delvene is celebrated for her story-driven weaving work, ceramics and prints, receiving interntioanl acclaim (including the design of the Gold Coast 2018 Commonwealth Games medals).
From there, Delevene invites her guests into a weaving workshop in the scenic Brisbane Botanic Gardens. Using local plant fibers, guests learn ancient techniques across coiling, twining, and knotting - creating a personal piece to take home.
